A few classic shoot 'em ups that I would love to see updates made of like Galaga has had:

Juno First
Gyruss
Satan's Hollow
Tac-Scan
GORF

All of those are great games that would do well if properly updated to a current console.  I can see the music for Gyruss being very impressive given how good the music was for the original.

Very psychedelic, the Jag is a great system for many retro game updates. Oh well...

I would also really love somebody to make a new Double Dragon game that keeps the style of the original game. Something like the brilliant Street Of Rage Remake combining levels and enemies from all the games and keeping the graphical style of the original. I liked the remixed versions of the music in Double Dragon Neon so they would be a welcome addition too, the DD soundtrack is one of my favourite ever.

I always loved this game and think it has great potential as a remake/update:

Atari game - Power Down - Final

When you pass through the upper wall and all guns are blasting - great stuff!
